Fans Not Mounted on Hinges

An exhaust fan that isn't on a hinge can't be properly cleaned — period. To clean a fan correctly the housing needs to open so the wheel, housing interior, and duct connection can all be accessed and degreased. A fan bolted solid to the roof with no hinge means whoever is cleaning it is wiping the outside and calling it done. Grease accumulates inside the housing and on the fan wheel with every cook cycle. If your fan isn't on a hinge, that needs to be corrected before your next cleaning.
