Espresso extraction is one of the most temperature-sensitive processes in any commercial beverage operation. The difference between a perfectly extracted shot and a sour, bitter, or flat one can be as little as two or three degrees at the group head. A commercial espresso machine that can’t hold consistent brew temperature has either a failing heating element, a thermostat or PID controller that’s drifted out of calibration, or scale buildup on the boiler interior insulating the heating element from the water it’s supposed to heat.
